The Planets was the music that inspired John Williams to compose the Star Wars music. Besides that, it's great. I'm into all genres (except mebbe for stinky hip-hop).

Holst's The Planets. While there are some truly extraordinary pieces up there, The Planets in its entirety blows them all out of the water.

I love Carmina Burana, a superb piece of classical music. The darkness to it is one of the main things that attracted me too it. O Fortuna is great because it starts because it has such variety in it. It starts out very loud with the chorus, then goes to a very quiet middle, which leads up to a very loud and fast part, to the end which is very fast-moving and vivacious.

Hmmmmm, choices choices...
Hands down the winner for me is the same as YS... the adegio for strings is dispare put to music...
Other than that... The old standbys... the 9th and the moonlight sonata, (Ludwig van), the Requiem by Mozart as well as Andrew Lloyd Webber (his Pia Jesu is ALSO gorgeuos)... Carmin Burina in small doses as well as Ave maria....

These are all great pieces of music, but I had to vote for 'other', since you did not include any of those charming, enormous, never-ending symphonies of Gustav Mahler .
I have to mention Shostakowich's Sonata for cello (that's mostly because I've played it), Dido & Aeneas from Purcell and Venus & Adonis from John Blow (playing the continuo in both was an unbelievable experience), and Bartok's Piano Concerto #3 (just love it )

After having played the Pachelbel Canon at way too many weddings, that's off my list.
I voted for Beethoven, but Mahler's 1st is my other favorite. I love playing both of those really loud in the car, with the windows open, and watching the looks I get.
