Well it depends. Would the SE/Ultimate edition be on the same DVD as the regular adition for the "both" selection? If so, I'd buy both... if not, just the SE/Ultimate

Probably both. I'm not sure about the SE's though, and if he doesn't release th originals, I definitely wont buy the SE's.

Hopefuly, Lucas will release the OT DVD's the way Spielberg did 'E.T.' -- put out a 2-disc set (of each episode) with the original and SE versions.

Both. While I prefer the originals over the SEs, there are also changed/new scenes scenes in them that I do enjoy. Though if I only could have one or the other, I'd go with the originals without a second's hesitation.
