Twi'lek
Wookiees and Ewoks are good too, but I'm going to go for these head-tailed humanoids. I'm not sure, it could be because I like to role-play as them, or just because I have this image of one from a KOTOR game stuck in my mind. And I like saying the word lekku.

Wookie.
I'd like to think the reason we haven't seen any of the idiotic species Lucas created for the PT (Gungan, Geonosian, those trade fed idiots, etc) in the OT is because Chewie single-handedly tore all of them apart limb from limb in the interim.

A perfect world: a house in the Hamptons with two solaria and a horse named Prickely Pete, Dr. van Nostrand as my primary care physician, the O-OT legally available on DVD in a quality worthy of its greatness and Luke the undisputed hero of Star Wars

I didn't suggest human because I figured that we're all kind of biased.

Humans aren't a Star Wars species, they're an Earth species.
