Yoda Vs. Dooku in Attack of the Clones . My Eyes were wide as I watched Yoda do those crazy stunts. I thought Dooku was dead the second Yoda ignited his lightsaber.

I still have to say Qui-Gon/Obi-Wan/Darth Maul.
Obi/Anakin was disappointing because it was too flashy, literally the flashes of the lightsabers made it difficult to see. That and to me it seem too sped up and all the CGI was distracting.
