The list I came up with for martial artists are for characters that are known for martial arts being their main aspect, it is the center of their character and is not overshadowed by anything else.
When most think of Batman they think of the Batmobile, the Batcoptor etc, not martial arts; If Darth Maul made the list then so should all Force Users; I almost added Neo but decided to shy away from Chosen One/Super Omni Uber Beings and other characters from those movies would have to have been added as well. If we had 20 options to choose from I might have been tempted to add Neo.

For me it is Iron Fist.
I have to say that as presented most of the time in Marvel Comics this character can be forgetable but the character has some great moments. His latest incarnation in The Immortal Iron Fist comic and his role in Civil War stand out.
I almost chose Beatrix from Kill Bill, but Iron Fist has been in my psyche for too long.
