Yes, I tend to think Owen was projecting backwards on what Anakin should have done before they even met each other, which was to have stayed by Shmi's mother's side like a good son. By extension, if Anakin had not gone off to become a Jedi, when he got older and the Lars family came into their lives, Anakin would have been around to a) protect Shmi from the Tuskens, so she would never likely have been captured at all; and to b) help Owen on the farm and so make his life easier. That was the source of Owen's grudge against Anakin.

I haven't watched the prequels in a while, but I believe that although Anakin built the skeletal parts for C-3P0, he did not actually receive his casing until the second movie, while living with Anakin's mother and the Lars family, so it is reasonable to assume that at some point they went on down to Watto's or some Jawa traders and bought a protocol droid casing for him.

I didn't see anything that resembled damage on the A-Wing that flew into the bridge of the super star destroyer in ROTJ; however, is there mention of it being damaged in the novel or was it just a kamakazi pilot?

He was an inadvertent kamikaze pilot. He lost control of his ship and it crashed into the bridge, destroying both the bridge and the ship as evidence by the large eruption of fire coming out of the bridge before the SSD crashed into the Death Star.

It also stands to reason that Owen never dreamed of a life beyond Tatooine like Anakin.

Has anybody ever noticed the storm trooper who hits his head in episode 4?

Most people have noticed. George Lucas went back and added a "Clunk" noise for the DVD, and there's a reference to it in Attack of the Clones (Jango hits his head entering his ship... his clumsiness was cloned).
