Making banners is not hard. I have made several of this exact size (most not for the JC). It does take a little practice to get them to look "professional" like many you see on the JC.
For reference, try these links:

Grimby's Banner-Making Guide
We don't have a Death Star (original) banner. That would be a cool theme.
Maybe a droids theme? or a Han/Chewie theme? or a cantina theme? Jabba's palace/sail barge theme?
