i think that Bail might have told Leia about Anakin and just told her he didn't deserve the fate he got.
As for the Imperials I think that they just said that Anakin died at the temple or that Vader personally killed him since it is the truth-from a certain point of view.

She did recognize the name, but it is actually a very common name in the universe; equivelent to Johnson.

I think it was pretty well established when Luke appears that he was the son of the famous war hero, he knew it, and was proud of it, so I doubt he would have been shy about it if Leia had asked or something. I'm sure she recognized the name anyway, maybe that's why she was confused when Luke tells her his name. Maybe the reason he said his full name was to establish that he was the son of Anakin, I don't know, to impress her or something.

Though this is a bit off topic, I was wondering how much Leia speculated and/or was given information about her real family. In ROTJ, Luke asks her about her "real mother;" Leia's reaction to that question makes me think she was at peace with the fact that he was adopted (that being said, the arrangement was a bit different than Luke: Owen/Beru Lars were "uncle/aunt," while Bail Organa was Leia's father). Is it possible that she was told she was a Skywalker?

According to the EU, Anakin had been pretty well known as a Jedi during the Clone Wars.

I think if she knew such a fact, it would be dangerous. I always thought that the name Skywalker was sort of kept a secret during the Imperial times. Just look at how much trouble did the name bring in ESB and between ANH and ESB when Vader was crazy about finding Luke.
And according to EU, Leia didn't have a clue about her parents till just a little before the Dark Nest when she and Luke found out that their mother might have been a Senator from Naboo. but they weren't sure since it was confirmed before their eyes in Dark Nest, from Artoo's memory.
