I think Jabba's tastes had a little more to do with George Lucas and his film making decisions.  After all, hasn't Leia's metal bikini gone down in history as the hottest sci fi outfit ever?
But yeah- if you want to ask the lit, then Jabba had strange tastes, for a hutt. And personally I think Yarna would be more attractive to Jabba then Oola or Leia would... She's a little more hutt-like. Maybe Jabba enjoyed the dancing.

Twi'lek dancers, for example, are attractive to most species in the galaxy, so I guess Jabba would like them as well. As for Leia (human), I don't know, maybe he just likes that metal bikini. I know I do.

Anyway, most humanoid female are thought of as sex symbols, and many powerful males have them as dancers, slaves, or aides.

Here's an answer from sw.com's Q&A section about why a genderless Hutt should have slave girls:
Day-to-day Hutt life really has no need for gender roles. Since Basic doesn't have a suitable genderless pronoun (the term "it" is kind of insulting to most), we tend to refer to a Hutt as "he" or "she," even though it's not biologically accurate. Commonly, most Hutts are referred to as "he" until they are pregnant with a brood, during which they become known as "she." Jabba the Hutt's depraved tastes were looked on with disdain by many Hutts who thought his obsession with the female humanoid form perverse. Jabba's increase in power, however, led to many fellow Hutts imitating his particular brand of debauchery.

Interesting. I didn't know Hutts were genderless. And Gardula the Hutt in The Phantom Menace looks pretty much like a female.
