I would imagine the fact that he had tortured her twice and destroyed her entire homeworld also had something to do with it. Vader had done horrible things to Luke, but not on the level of those he did to Leia.

True, but stubbornness also had to play a bit of a role. Anakin had clearly not been his good self when he did all of that and had later been redeemed. A bit of stubbornness, combined with the obvious contempt she had held for him, likely had something to do with it.

That was more so in the first two films, which were still sort of "coming of age" stories for her. She seemed to lack that by the time Episode III came around, which I think kind of symbolizes that she had grown up because of the war.

Luke was a Jedi. The Jedi used the Force to sense things in others. I felt that was pretty clearly put forth within the scope of the classic triology. Vader could sense things in Luke too - "A Sister!" ("I have twins!!!! Padme and I were both right!") He could feel Luke's anger and also he could feel Luke's presence when even the Emperor could not.

A few reasons;

He's got his mother's empathy, he has a feel for these things.

Not knowing he's father his whole life, he naturally doesn't want to believe his dad is the most hated man in the galaxy. He wants to think of his dad as a hero, as at the very least a good guy.

Related to the first point, in the eyes of Yoda and Obi-Wan Anakin is dead and there is no hope of him returning. Luke is more open to the possibilities of his father having some shred of human decency left in him.

Not every Force-sensitive being can sense everything in the Force, for example, when Vader announced to the Emperor that Luke was on Endor, the Emperor questioned his judgement since he could not sense it himself. Same thing with Luke - Obi-Wan, Yoda, the Emperor all believed in their heart of hearts that Anakin had been completely corrupted and had nothing left in him to redeem, whereas Luke could feel that hint of goodness and was willing to do whatever it took to bring his father back to the light.

According to one of the books it appears that Qui-Gon knew there was still a remnant of "Anakin" - the good - within him. It may be that the Jedi simply didn't expect that remnant of goodness to win out in the end.

I'm going a little off topic but I think in AOTC, when Padme suggests they go rescue Obi-Wan, Anakin first assumes he must be dead already. He doesn't even try to use the Force to sense Obi-Wan. That's the case in both the novel and the movie. I guess this a good way of explaining this.

I think that after he came to terms with the fact that Vader was indeed his father he believed in him just like how Padme believed in him in ROTS. He just knew in his heart like she did. Witch makes Vaders last words all the more meaningful, when he said to luke "You were right, tell your sister you were right about me" it makes perfect sense for him to say that because anyone's last wishes in a situation like that would be to have the only other family member (Leia) to know there was always still good in him just like Padme (his wife) did and Luke (his son) did.
