If Vader was indeed wanting to overthrow Palpatine then it would be smart to freeze Luke. This gives the apperance that he's going along with his Master. And then after Luke is unfrozen he and Vader rip themselves of Palpatine,

So he (Vader) would want to sell as much as possible that he was on board with his Master since Palpatine was a pretty smart person.

Why couldn't Vader just knock Luke out with a karate chop to the neck? It worked on dozens of 1960s-70s TV shows.

as for the destroying the emperor with Luke thing, we know from the force unleashed that Vader cant be trusted when it comes to this
