There are many ways people express stress. Some are definate physiological responses, such as increased heart rate and respiration, others are just how people respond. Some examples would be biting nails, twisting earlobes, wringing of the hands, getting shaky, or the example you listed. So, based on your logic, when Solo was shaking after Leia freed him from the carbonite, he wasn't suffering hibernation sickness, he was just stressed, that,s all. Vader used the Force to slightly constrict Lando's trachea, sending him a message about who's in charge.

He didn't warn Lando that he never planned on keeping his side of the deal in the first place. Considering the torture they went through at the hands of Vader, him just giving Lando a "little choke" is rediculous. There just really isn't anything that proves that this is more then a viewer's imaginative elaboration.
