What are the differences between the Imperial I-class Star Destroyer and the Imperial II-class Star Destroyer?

Star Destroyers
In-universe: stronger shields and improved armament
Film production: the tractor beam array on top of the bridge section was replaced with a communications tower (it was a cleaner look vs the clumsier array) and the turbolaser / ion cannon turrets along the sides of the ship were replaced with eight-barreled turbolaser batteries (looks more menacing, at least IMO).

Probably just some upgrades. Honestly, I don't care much for knowing these specifics, otherwise you'd have to ask why the GFFA's been using mostly the same weapons for over 5,000 years
