Not sure if this would apply as he was not made a master but if I had to apprentice to someone it would probably be Jacen Solo. Not for his innate darkness, but for the reasons that he has travelled the galaxy and unlocked so many other facets of the force that the Jedi Order of the Old and New Republic didn't. He has a much broader understanding of the force and it's possibilities, and yes it's dangers.

Definately Kyp Durron.
Not only because I think the man's totally hot, nope. Because I like the way he does what he deems necessary and what he considers to be right.
He talks less and does more.

i would have mulitple masters in order to learn as much as possible. but if i had to choose one i would have to say Luke Skywalker. despite his inaction sometimes he is one of the greatest jedi master of all time. he has the whole package strength, compassion, and wisdom. he deserves the title of Grand Master

Obi-Wan Kenobi.
Because he's the best.  Not to mention a fantastic swordsman. And..well..I've always found lightsaber duels... 
Kyp Durron.
Because he's a rebel, sexy, mega powerful and has a darkside.  Plus, he could probably teach you alot about the tougher area's of life in general.
Mara Jade Skywalker.
She's smart, lethal, tough, and I respect her. She absolutely wouldn't take any of my crap. She would tell me off when I needed it, like she did Jaina in Sacrifice.

I would pick several masters to tutor me in the ways of the Force.
My priamry master would be Qui-gon Jinn. As scary as it sounds, I'm exactly like him in a lot of ways. The tendenc to bend rules to do what is right fits perfectly into my character. I am an idealist, so I would want an idealist to be my mentor.
Corran Horn to teach me all the practical uses of the Force. Energy absoption and image broadcasting would come in mighty handy.
Luke Skywalker for his wisdom.
And for the darker sides of the Force...I'd have a quartet. Bane, Sidious, Plagueius, and Revan.
With these seven masters, I would eventually become unstoppable.
