Umm she's not particularly more impressive in the X-wing comics than any of the other folks (actually, Elscol Loro pulls neatest piloting feat out of any of them in Battle Ground: Tatooine), and I don't see any rushing out to draft Dllr Nep...
Biggs was trained by Baron Fel, better than Hobbie during that time, the only pilot to keep up with Luke Skywalker on Tatooine, ace in one mission, so good that Wedge described it like he could read minds...he's more than good enough to make up experience gap because he is definitely more skilled. And the experience gap is slight because Plourr was not a pilot for that long. A few months before revealing her role as princess, then some sporadic duty for like...a year. Tops. Compared to Biggs extensive training (which Plourr lacks) and his time with the Rebellion, even that gap is practically non-existent.
