I know they were about the general expansion of the Mandalorian empire, but what did the Mandalorians do to the conquered worlds? Did they just commit mass genocide on every world they conquered before Revan stopped them, or did they enslave the populations?

i don't think they would have performed genocide. It doesn't really seem like a Mandalorian thing to do. I guess enslaved people? But even that doesn't really seem right. Maybe just get more planets and just rule over people, expanding the numbers of Mandalorian soldiers with volunteers from the new planets.

But they won't let me dream to live or live to dream.

Eres II and Serocco were bombarded from orbit, the latter actually nuked, I recall, and Duro was smashed. Oh, and Malachor V was physically ripped apart by the battle fought there, but that was a Republic superweapon. Basilisk was poisoned by it's inhabitants in a last ditch attempt to stop the Mandalorians.
The Mandalorians in this time period were nomads; the majority of their fleet and army was mobile, simply restocking, gathering material from the conquered world, and moving on when resistance was defeated.

IIRC, they did wipe out entire species, or came near to it.
Edit:
But aside from attempted genocide, were they indeed slavers?
