I'll give the challenges a shot. Not promising this will be successful, but there might be something amazing that comes out of this experience. (Is it weird that challenges sometimes bring out some of an author's best work?)

Sounds interesting I'll definitely be looking on, if not participating.
Question: Will there be a challenge to write for -every- week of discussion? AKA 25 fics by the end of the workshop? And is there a real deadline-- if you miss a week or you're late are you 'disqualified' or anything?

Good questions, guys.
The challenges are purely to help you grow as a writer. There are no -real- deadlines, and it's not a contest, so no-one can be disqualified. I would prefer if the challenges were completed and posted within your portfolio thread the week they are issued, but if that becomes an issue it's not a big deal for you to be late.
