I'm not sure if 1 software can CAPTURE multiple cams at a time, but as long as they're time synced and you have 1 good audio source, the the aforementioned multi-cam editing options would work fine. For example...a multicam band setup i've done.

Camera 1 - free-roaming/handheld/don't care about the audio
Camera 2 - see camera 1
Camera 3 - stationary, board feed into cam, capture to laptop

All 3 cameras were firewire sync'd and using the same scene files (DVX100B). I used the audio off of camera 3, but the video I switched between the three with the multicam editing. This was in FCP5, but i know it can be done in Premiere, I just haven't tried it yet.

Just do it the way it's always been done....capture from multiple cams, take the time to clearly log and load each one separately and make sure you have a slate/sync point for each camera and each shot...then link them up with the multi-edit function in editing if need be. Are you only able to use cameras that load directly to computer hard disk? If so, and you can't rig up separate computers etc., then maybe it's time to rethink the shot and how you plan on filming it. If your shot exceeds the means you have to compose and capture it properly, then you'll most likely be short-changing it across the board.
