Since I was unable to make it and Pwinkie has yet to recover, what were some of the surprises? Anything new going on?

Ditto.  I was about 10 feet from launch, and all I was told was "don't move" by a rushing security guy. Thanks, buddy. 
Beyond that, the only surprise I had was no drama in the group, which was wonderful.

Out of curiousity - how did 'Fett' do the flight? Was he wired and using the jetpack just for effects? I haven't seen a video of it - just heard about it here.

Surprises were the Clone Wars trailer (which popped up on sw.com the same day as the first panel), and the showing of the full rough cut of 5-25-77. Other cool tidbits throughout the week were seeing clips from the new SW Robot Chicken episode and seeing about 45 minutes worth of clips from Fanboys.

Real jetpack. They used it during the rose parade as well.

The Outrageous price of food in the center. I mean come on , $7.50 for a turkey sandwich?
Just how super nice everybody at the Holiday Inn center was to me. How super nice everybody I spoke to in line was to me.

Here's my list:
- The efficiency of the Celebration Store
- Being deafened by Boba Fett flying INSIDE AN ENCLOSED AUDITORIUM. Punk.
- The awesomeness of Star Wars Celebrity! Seriously, this was so much better than the masquerade at C3.
- The encore showing of the Clone Wars trailer. The first showing surprised nobody, no matter how many times they tried to tell us they couldn't show footage. But a second showing less than a minute later? Now that tickled me.
- Seeing R5-DD in the R2-D2 Builders Room. Anybody who's keeping up with the Pink Five fan films knows what I'm talking about. Even cooler was seeing her roll out onto the stage during the Pink Five panel, which was another highlight of mine.
- Meeting Temuera Morrison in the restroom by the autograph area. I was trying to avoid eye contact and just leave him alone, but Tem was all like, "How's it goin' there, brother?" I had to geek out after that.
I'm sure there's more, but that's all that comes to mind at the moment.
