I wrote a fanfilm script a long time ago where a half-trained Rise of the Empire-era Jedi killed himself after he brutally killed one of the Emperor's Inquisitor's using Force Lightning. He did it because he fell to the darkside and felt he couldn't be redeemed after such an act.

I've had one deliberately charge into a lightsaber fight he know he would not win. He made it just real enough for the Dark-sider to counter-attack, but delayed initiative to make sure the dark-sider got first strike and charged to create attack of opportunity.
I think the player was tired of the character.

Hm. Neither of those seem to be convincing the jedi to kill themselves per se... I mean, it sounds like it would've been an interesting script to say the least, but once a jedi falls, I believe they are no longer classified as jedi. In Koohi's case, the player simply tired of the character.
I was thinking of something along the lines of talking them to death, akin to shouting at fish to jump into your boat.
I'm not even sure if it'd be possible, which'd make it even more impressive if pulled off.

The ultimate Jedi Killer: Darth Vader.
Another good one: Squib Battering Ram. Found this while flipping through one of the Fantastic Technology books. Hand-held device designed by Squibs. It shakes things apart. Rnd one damage is 3D. Rnd two is 4D. Rnd three is 5D, etc.
Can't deflect the invisible area-effect tractor/repulsor beam with a lightsaber, now can you? I don't think absorb/disipate energy would work either.

Here's an idea: Use obsolete technology.
Any given warrior/soldier/jedi worries about encountering threats of the present day, and are trained to counter the threats of the day. Even if a lightsaber were capable of turning bullets to slag, I'm willing to bet that blaster shots and bullets move at different speeds, at that the fraction of a second could make an enormous difference. Heck, they probably wouldn't even recognize something like a crossbow or a blowgun.
Here's a second idea: Break them.
Break their minds by any means nessecary. This method is gauranteed to involve lots of collateral damage, but convincing them that they're a danger to everyone around them'd be priceless.

Darksider uses Farseeing to find out when the Jedi will next try to use Farseeing. He then uses Affect Mind on the jedi to plant illusions that the Jedi is destined to fall to the Dark Side and become a powerful force for evil, a cult of personality, a tyrant ruling over a horde of murderous slaves out to wreck havok. Then plant further images in dreams. A constant bombardment of alternate possibilities.
Drive the Jedi insane, suicidal, or to the Dark Side in a self-fulfulling prophecy.
Psychological warfare is fun.

kicking someone in the groin. How very droll. Yellow-belt in karate can tell you how to defeat that move. (of course, it won't be perfected at any serious level until green belt (6th kyu).
The neat thing about the psych warfare is it can start small. during one adventure: "You wake up from a nightmare" begin adventure. Slowly add detail. "You see a cave filled with hordes of foul-smelling humanoids in dark, ragged clothing. It smells like and abatoir full of stale blood, filth, and the combined body odors of a hundred species. The faces you can see are savage, with primitively sloped brows and distended yellow teeth. They are bowing at you. No, at someone near you. You turn and see a black throne--really just a decayed wooden armchair. There's a shriveled skeletal humanoid with glowing yellow eyes sitting next to it, staring up at you with hatred. As the army of humanoids below continues chanting, the figure in the chair seems to get stronger. You wake up." After a couple of these dreams, let the character interact with the scenery. Let him/her fight or run or talk. Whatever. The figure in the chair will get more and more familiar, younger and more each time. Eventually, the figure in the chair will, of course, look almost exactly like the character him/herself. Do it right, and you can really creep out your players.
Mix in a couple of different scenes, of course. Force-lightning of a child on a transport. Deflecting a blasterbolt into a crowd and killing someone. Little things. Each time, built it up. Sometimes the figure is in the dreams, sometimes not.
Read some H.P. Lovecraft for narative style, language, prose, etc. Nice, unwholesome reading.

You don't particularly HAVE to use dreams tho... you could also use the conspiracy scenario, where you get both character and player to believe everyone on your world is out to get them.

Oh, I figure the Jedi will run into an underling of two. When they do, the underling can confirm or reaffirm what is seen in the dream. "You may be high and mighty now, but you will be so much more so once you join us." Or something like that. It can be really nice if the GM describes a setting (like a cave, temple, office, whatever) in exactly the same words s/he used when describing the dream.
