After discovering OCRemix.org, my harddrive lost a respectable amount of storage space  The Castlevania stuff up there is killer- "Castlemania" in particular is just so freaking catchy. I'm also fond of the Punch-Out!! song "Little Mac's Confession" (tell me you don't want to cry out "Punch-Out!" alongside that one ::) ). Jurassic Park 9SNES)'s "Before Time" is catchy too. And I rather just love Super Mario Bros. 3 "Battle Rocks". Snazzy.
Beyond OCR, the best game music remixes/renditions I've enjoyed include Project X (which does Mega Man game tracks, particularly Mega Man 2 and 3), The Minibosses (who are just on a whole different level of awesomeness than mortal man) and Metroid Metal by Stemage (gotta love that killer rendition of Brinstar and Lower Norfair).
