When did Luke Skywalker openly say that he was a Jedi to the Rebel Alliance? Did he say it after the Battle over Yavin IV to explain why he turned off his targeting computer?

He didn't consider himself a Jedi until he had his training with Yoda. But if you mean openly a Force user then I'm pretty sure news got around as soon as he touched down on Yavin IV after popping the Death star.

What was he until then? Padawan?

Well, you could say that. Luke was trained by Obi-Wan, so he was his padawan. Obi-Wan dies, then Yoda trains Luke. So he becomes Yoda's padawan learner.
After Yoda dies, Luke no longer has a master.
It is a nice link to Obi-Wan's "promotion" back in TPM. His master dies, so the Council grants him the rank of Knight.
But I wouldn't use the term 'padawan' as (at least for me) that would imply that the Jedi Order was still there. In the OT, there was no Jedi Order, just two masters who escaped danger and now live in exile. The Jedi were no longer part of an organization so the titles of master, knight or padawan had no more meaning.

Ehh...idk about that. Luke repeatedly calls Yoda 'Master' in TESB. Just cause there's only two of you doesn't mean rank has no meaning.

    Also.

"Greetings, Exalted One. I am Luke Skywalker, Jedi Knight and friend of Captain Solo."

OP's answer is Return Of The Jedi.

Jedi Knight sounds better than Jedi apprentice, especially when you're trying to work out a deal with Jabba.

Although the films do use the titles interchangeably, under certain circumstances-Obi-Wan and Qui-Gon are described as "two Jedi Knights" in the opening crawl, when they're actually "A Jedi Master and his hack apprentice". Similarly, Yoda and co call Obi-Wan Master Kenobi in AOTC, despite him not actually being a Jedi Master yet. There's wiggle room, and honestly, its not like Luke really changes much from confronting Jabba to confronting Vader-he has the same skills, and more importantly, the same iron belief in his father's goodness.

Vader to Luke in TESB: "You are not a Jedi yet" (did he think he wasn't strong enough?).
Luke calls himself a Jedi for the first time in ROTJ. It seems a bit grating to me because he did it before seeing Yoda. "Delusions of grandeur", indeed.

Well, given that he straight up tells Jabba that his options are surrender immediately or be killed...Luke's done playing Mr. Nice Guy with this situation :p

Which we don't really see (I mean, the pieces).
Still think he should have met Yoda before proclaiming himself a Jedi knight, but I can see why they wanted to start a movie with fun stuff.

I think it's supposed to supply an underlying edge to Luke-he's starting to show shades of his father, here-the ego and anger, although we don't really see his anger until he nearly loses it in the throne room.

"I am a Jedi, like my father before me."

I think this is when he realized he had passed his 'trial'

Yep, likewise. Shame we didn't get to see the lightning-wrangling trick until AOTC-Luke was going to do it briefly with the Emperor.

Right, wearing all black and choking guards.
By the way, he seems to forget his mad skillz on Endor (I guess hacking teddy bears to pieces wouldn't be liked by kids).
