The problem with this question is that out of those seven, I can think of six of those that had an influence on Anakin, whether it was directly or indirectly, and we have to choose the one which we think GGrievous finds the most appropriate

 

Well, as I am running out of time and I'm not sure whether I'll have an opportunity to be online tomorrow (new house, no internet yet, etc.), I sent in a provisional answer.

Part 1: A Retired Galactic Republic pilot. Anakin wanted to fulfill his dream of becoming a pilot, and the pilot acknowledged him, stating that being a slave should not be permanent.
Part 2: Kitster. I will accept Wald since he was around, but the novel + small minor kid books show just Kitster near the pilot with Anakin.

Don't think too hard guys. As per the rules, and I even pointed it out in a hint, questions won't always be within the films themselves. I even said read and friends in another hint. Had the question stated "pilot" or something, it would've gave it away.
