I know theres a giant thread at the top on what to read, but its like reading another novel to get through that thing.
I thought it might be a good idea to list books that you would skip if you were reading the entire EU from beginning to end.
I started reading from the beginning last yr and am up into the Thrawn Trilogy now. Ive skipped a few books and read a few that Id rather have skipped.
If youre listing a book to pass on, say why. Was it lousy? Did it NOT advance the SW Universe at all?
One that I read and wouldnt bother with again would be The Cestus Deception. It wasnt a bad read, it just didnt really do much for me, and didnt seem to add much to the SW Universe.
Others I skipped due to either lack of interest or poor reviews were:
Darth Maul: Shadow Hunter
Rogue Planet
Shatterpoint
Jedi Trial
Lando series
Splinter of the Minds Eye
X-Wing 5,6,7
It may seem like sacrilege to say this, but the original trilogy was nowhere near as good a read as the prequel books. ( this is not a comment on the movies, just the books )

I was going to give you advice based on my personal likes and dislikes, but I figure you're not really looking for that.
If you want novels that serve to advance the plot, it's easier to tell you what to read rather than what to skip. Read either the Jedi Academy Trilogy or I, Jedi (both, if you want, but I recommend skipping the juvenile writing of the former), the Corellian Trilogy, and the Hand of Thrawn Duology for relevance-- throw in Black Fleet Crisis for enjoyment, from what I hear, although I've not read it myself. Once you hit the New Jedi Order era it's less easy to skip stuff; I'd recommend reading only the hardcovers and Traitor if you don't want to deal with all 19 books, but all of them are pretty relevant to the story. After that feel free to skip over Dark Nest, but you're unfortunately going to have to read the Legacy of the Force series if you want to keep up with everything.
Oh, yeah, and do yourself a favor and go back and read Shatterpoint. It has very little bearing on the overall saga, but it's an excellent book.

Darth Maul: Shadow Hunter was like an antithesis of moving the plot along. Avoiding it was a smart move.

My list would byte into dozens, damn Ackbar's barbels. I'd rather list what you can read.

I figure that eventually, I'll get all the way to the end, then start over. Im not in any big hurry, so it could be a few yrs before I get to the end of the NJO series. By then, the Darth Plagius book will have come out and Im sure a few more early era books. Ive read enough good reviews that I will include Shatterpoint when I get back into it. It just didnt appeal to me at the time, since I found Master Windu ( and most of the snobbish Jedi Council ) to be rather annoying throughout the PT.

In the NJO,I'd skip Vector Prime,Balance Point,Dark Journey, and the Force Heretic trilogy. Those books had some interesting things in them, but for the most part they just drug on and you can find out all the events that happened in those books in the ones that follow them.

If you're reading from an enjoyment of story standpoint then I would say not to skip any. If you're reading for continuity or because you like books with battle scenes then look at the posts of others. The only book I have finished that left a bad impression on me is Outbound Flight because I felt like I read a lot of pages and got no where. I do intend to reread the book at some point because it could've been outside factors in my life that affected my interpretation of the book.

The Crystal Star. The only, only good part about it was Lusa's first appearance.

Rogue Planet, Cestus Deception, Jedi Trial, Lando trilogy, Splinter of the Minds' Eye, Truce at Bakura, Courtship of Princess Leia, Children of the Jedi, Planet of Twilight, The Crystal Star, The New Rebellion, NJO: Dark Journey and, perhaps, NJO: Force Heretic Trilogy are the most skippable SW titles, IMO. Almost everything else is either a pretty good read or has a more vital function within the larger story arc.
And Shadow Hunter was a pretty solid action title- pretty much one extended chase sequence, but a good one with some good characters.

Vector Prime? Why on earth would you skip the first book of a major series? That was the one that started it all for the NJO. I think one would be lost without it almost.
Also, some very important plot points happened in balance point such as the prophecy concerning Jacen and Jaina in a twin battle, Jacen Solo taking Tsavong lah's foot, Jacen finding the force again, and the Vong declaring that the lives of all Jedi would be required in order for there to be peace.

Anderson's books are good too. Especially the YJK series.
