If I'm not mistaken, I think Peter's boss was voiced by Carrie Fisher in this episode.
One of my favourite scenes is when he came to her house trying to impress her, knowing that she loves animals, and staged a ****-fight in her living room. When the enter the house, the entire living room is a filthy, bloodied and feathered mess.

Boba Fett is on Disc 3 of Season 3: Brian Wallows and Peter Swallows.
Luke is on Disc 3 of Season 3: When You Wish Upon a Weinstein
Boba Fett is on the episode where Brian gets a DUI and has to take care of the old lady.
Luke is on an episode that was never aired on FOX due to religious content and such. Cartoon Network aired it and it was given split reviews. To see it, either watch Adult Swim on Cartoon Network and try to get lucky, or obtain the DVDs and watch it there.
The Boba Fett one is correct, however, when I looked at the one for Luke, it wasn't there. It must be a different episode. I checked this out last night. I'm a huge fan of Family Guy and love the SW references, however, I do remember what the Luke one was, I'm just saying that's it's not there.
