Why does everyones theory on the TV show involve Jedi?
Enough.
Here's what George had to say about it:

It's like nobody hear even saw ROTS. I seem to remember the Jedi getting pretty much wiped out. Any that are left wouldn't be stupid enough (Or would they) to go around advertising the fact that they're Jedi. They'll be hiding in a hole somewhere, hoping no one notices them

Well I got one of these bullets right...Boba Fett is the poster pic for the new series. Talk about a minor character???? With GL's perception, The Emporer might be a minor character and yoda???? WHo knows what we shall see.

GL has clearly stated that the series will revolve around new characters and minor characters that we already know. So we most likely won't see Luke, Leia, Obi-Wan or Yoda.
Tarkin could be in there, because he was technically a "minor" character. But the only character we know will be in the show is Boba Fett. But we don't know how important he'll be or how much screen time he'll see. He could be relatively minor. So we'll see.

I really hope Quinlan Vos is in the series. It would also be cool to see Xizor.

I don't know about Xizor though that's a little bit"too EU" for me. (besides I just don't like the name.) Vos would be cool (although he technically died on Kashyyyk.) and GL has already included him into the Real (canon) universe of Star Wars.

No, he didn't. That was the original plan in the Republic comic series, but apparently word came down from GL himself that Vos should survive (which is what has led to the speculation that he may appear in the live-action TV series). In the comic, he's gravely injured but does survive.
BTW -- Quin, as a character from the comics, was always a part of the "real (canon) universe". Comics, novels, video games and the vast majority of EU are officially canon and part of the SW Universe, as per LFL.

Without a legitimate SOURCE, your claim that "word came down from GL himself that Vos should survive." is completely unfounded.
GL had Vos's death written into the script. The ONLY reason Vos "survived" is because of edits to keep ROTS the appropriate length. And GL, the CREATOR of all things Star Wars, is the Ultimate source.
Regardless, I think we'd both agree that the idea of Vos being in the TV series is a great idea.

I'd like to see:
- Jedi from the comics like Tholme, Quinlan, and K'kruhk who escaped Order 66, as well as some original characters, on the run and stuff.
- Hunters like Boba Fett, Bossk, and Dengar starting their careers.
- Early exploits of Palpatine, Vader (while he's still not so evil), and Tarkin.
- Formation of The Rebellion.
- Maybe snippets of/references to the main heroes.
- Use either Jabba the Hutt or Black Sun.
It'd be neat if this was done like Heroes, where a bunch of different stories eventually come together into an overall arc.

New characters with a few cameo's is what I'm hoping for. As for the no Jedi idea, I think you wont see a jedi in the traditional sense(cloak and saber), but I hope some former jedi appear in some form or another. They would be in hiding but I find it hard to beleive any remaining Jedi would take no action against the Empire. They were guardians of peace and justice, any who survived would not just retire and give up the fight. Obi and Yoda had a reason to hide, others would not know of Luke and Leia and would very likely be active in the early days of the rebellion. Again I don't think one will run around with his/her lightsaber as it would serve as a beacon to attract Vader/Fett/Others, but they will be around. I beleive the EU has astablished that only 99% of them were killed, thus a hundred or so are still skulking around. NEVER MIND THAT MACE WINDU NEVER DIED!!!!!(OK joke, I know he got fried,I've accepted it and moved on with my life.)

It would be pointless to show vader, because he can not be killed and we know everything about him. They must use characters with unknown background. Maybe the secret's apprentice from the "Force Unleashed", though there are approximatively 99.99...% chances to see him die in horrible/heroic fashion at the end of the game. And mace Windu is as dead as Tyranus, he was a secondary and rather useless character anyway. They should concentrate on completely new characters with mysterious background that will be revealed during the show.
