GG in CW and in ROTS aren't necessarily the same though. In CW he's dodging blaster fire and is like this ridiculous force of nature that can't be stopped. In ROTS he was kind of lumbering too wasn't he?

You'd think an Empire which has the technology to build a Death Star would have had the ability to make Vader into the Force equivalent of the $6 Million Man - "better than he was before."

The thing is, was Vader really that lumbering in the OT? Maybe I need to rewatch them soon but I never felt that Vader couldn't get around well. I felt like he was just this massive guy.

Plus, if Yoda can use the Force to become this like flying-ninja acrobat, why can't Vader use it to do the same?

Gendy Tartakovsky's Clone Wars was an adaptation. General Grievous was never meant to be the bad ass lightsaber wielding droid that you saw in the cartoons. The GG you saw in RToS is the accurate portrayal. I would actually recommend not comparing Gendy's Clone Wars to the movies or the new TV show because it takes a back seat to them when it comes to canon.

Just to jump in, General Grievous had very few organic parts left. That's a big advantage. Vader needed to keep as organic as possible, to maintain force powers / connection. At least, that's one explanation, not sure if it's a copout or not. I feel like Vader was pretty mobile though, he caught laser fire with his hand in ESB. I feel like Vader could take down GG in a straight-up duel.

I remember when I first saw the early GG designs, I thought, great, another throwaway sith. Then I saw the clone wars shorts. I was impressed there. Then I saw the cough in RotS and that motorized voice, and I liked that a lot too. And that point when he drops his cape, uncouples his arms, and ignites 4 jedi sabers -- man, that visual was impressive, like fine art. Maybe it wasn't as good as Maul's double bladed saber, but close. Plus, the way GG creeped away on 6 legs like a bug to escape from Obi-Wan, one of the best alien designs I've ever seen. Now I've gotten to the point where I like GG better than Maul. Especially since he has _no_ force powers, just strategy and intimidation, and he can beat jedi. There's something so **** cool about that. Maul and Dooku were the best picks for the prequils, but I'm more interested in Gen Grievous and Asajj Ventress as baddies, so it sounds like I will like the new series.
