Well spotted. This was because there was a whole section of the fight edited out at this point. Suffice to say the sabers were intentionally that way due to the original fight filmed, however to maintain pacing (I would assume), George edited that section out of the fight, which ended up with this magic saber switch.

u need the official nitpickers guide to star wars - 2 people wrote a book by looking at each movie frame by frame trying to find probs....lol
anyhoo if u like that one there are more e.g.
palpatine uses anakins lightsaber at beginning of the proper fight he has with mace windu
also
wen obi-wan fights grevious, grevious lightsabers change hands and colour!!

OMG, I missed both of those!, obviously I don't watch enough SW.
We can only hope that if and when the ultimate, uber-cool, mega packing case box set comes out, the fight will be there in its entirety. I did notice on the behind the scenes stuff there were a few moves that weren't in the finished movie.
