What is dirty about that?
Perhaps Anakin thought that Dooku was dirty for chopping his arm off.
Or using lightning.

Regarding the Novel vs Film of that fight I have always thought that they didn't jive well. In the novel Dooku is portrayed as being totaly outmatched by Kenobi and Skywalker. In the film it appears that Dooku is still far superior to both of them and can duel them at once. Only when the Chosen One dips into the Darkside is he able to overcome an over confident Tyranus.
What I see in the film ( and I don't recall it being portrayed in the novel ) is that Anakin fights dirty.
How exactly was he fighting dirty?

When you are fighting for your life(or think that you are fighting for your life) and the life of your friend, there's no such thing as fighting dirty, imo.

I dunno about fighting dirty. I kind of think the rules go out the window in a fight like that, even if there are rules
(is "don't drop balconies on people" in the rule book?")
And actually, Dooku isn't portrayed as totally outmatched in the book until the very end. He's struggling, but we don't get either hero's POV of his smackdown of Kenobi. When we get Anakin's POV at the end Anakin certainly feels he's fighting for his life too.
In the novel, both sides start out toying with each other - then Anakin and Kenobi amp it up and try to catch Dooku by surprise, barely failing. Dooku ups his game as a result. Takes out Kenobi, Anakin's still after him. Dooku struggles to adjust, and taunts Anakin into losing his focus again. When Anakin does, Dooku relaxes and thinks he's still going to take it. Then Palpatine encourages Anakin, Dooku goes "What?!!!" and Anakin unleashes all kinds of darksidish whoop-a** on the Count.
I guess the implication in the novel is that if Palpatine hadn't been there, Dooku plus two battle droids could have successfully taken both of them out because Anakin wouldn't have been able to reach his potential.

I agree with rumsmuggler. When you are fighting for your life, you do anything and everything you can to survive. Dooku's fighting style resembled a more "gentlemanly" style where crossing swords was the way of battle. Anakin is different. He uses power, surprise and brute force to defeat his opponents, hence the loss of Dooku's hands.

That's pretty much what i got from it.
Talent and skill with a saber, Dooku owned em both, but Anakin was more powerful and simply over powered him with his anger and hate.
in this instance the dialog and the film both jive with that, rare in star wars heh.
