I've been rewatching Disc 2 of the series, because those are some of my favorites. They're the funniest ones to me, and everyone is still settling into their roles and it's still new and Mal doesn't want to kick Simon off the ship. 
My favorite moments included some with Jayne. In Shindig when Mal insults Kaylee by making fun of the fluffy pink dress she wants to wear, and she storms off with Wash and Zoe, and then Jayne is all, "What? Is she mad or somethin'?"
And then in Safe, when Jayne goes through Simon's stuff. "Dear Diary, today I was pompous and my sister was crazy." <333!!!
Also, I have missed Simon's snark SO much. "I'm sorry if she tipped anyone off to your cunningly concealed herd of cows." His snark comes out of nowhere like that, and it's kinda subtle, but it's so great.

I love every time someone punches Simon--it always seems so senseless.

In Out of Gas, our first glimpse of Kaylee.
"You want a slinky dress? I can buy you a slinky dress. Captain, can I have some money to buy her a slinky dress?" "I'll chip in." "I can hurt you!"
