I would definitely have to go with Jar Jar Binks, he is such a pivotal character in ROTS and I really would have enjoyed to see him in the OT.
But seriously, I would have saved Darth Maul, even though he is in ep1, I think it would have been sweet to see him develop as an actual character and the duel between him and Anakin could have been off the hook.

Maul should have lived and gone on to fight Anakin on GG's ship instead of Dooku.

I'd have saved the pilot droid that R2 tripped. He didn't deserve it, and wouldn't something with that personality be a blast to have around the house?

Who would I want to survive.
In no specific order: Shaak Ti, Aayla Secura, or Barriss Offee. Whichever one of these three would be in the best position to survive, survives.
If not those three, then Ki-Adi-Mundi. The only Jedi during the Order 66 bit aside from Yoda that actually discovers that he is being betrade, and attempts to fight back. Had I been him, I would have been jumping off of the bridge he was on as fast as possible, regardless of what was at the bottom. Take your chances jumping then having an army firing on you.

but i would defenitely go with obi wan

I would save...well I myself would save a lot of things
1. Shaak Ti (Shes so pretty......)
2. General Grievous (hes so cool.. and he and Shaak Ti might have some.. sick love.. since he spares her so many times in the clone wars cartoon >_<)
3. Artoo's Repulsor lift things...
4. Threepios Memory ( I mean... the movies would be much different...
Threepio: Master Luke! Vader is your father! Lady Padme is your mother! and these two arent even related to you!

5. Kit Fisto
6. Aayla
7. Darth Maul, Dooku.
8. Palpatine's old face (his evil face scares me >_> <_< >_>)

11. The taun-taun that freezes while Han saves Luke. (wait.. Xero.. its time to backtrack.. your not even in the prequels anymore.)
