So how do we know he is dead? 
I am sure poor Mace is dead, with a missing hand etc.
But still...one of the most powerful Jedi shouldn't go out like that!

By which he meant he didn't want to get stabbed in the back, or, presumably, completely owned in the space of a breath. If you ask me, he's getting more than his character deserves.

luke fell a couple hundred feet onto a slide at an angle which with the coefficient of friction helped reduce his speed as he plumeted limiting the damage he sustained. BTW the music when he falls is now in my head thanks.

Just you wait. If we don't see him hit the floor, guts spattering over cars and his brains falling out (You'd have to freeze-frame to see the latter in Mace's case), the EU will ham-fistedly bring him back in some inane "I was always evil – Eat my purple lightning" manner.
He and Maul will probably return as conjoined torsos on robotic limbs, squabbling over the one breathing apparatus they comically have to share between them.
