Maya or Max?

I'm about to start working with 3d animation - primarily to build starships for my star wars film, and I'm wondering which program would acomplish this better? Maya or Max?

There are MANY topics about this.
Basically, both are extremely capable to create the same things but they do them in different ways.
Best thing to do is test them yourself and see which one you like working with better.
There's a Personal Learning Edition of Maya for free download and a 30-day Full trial of 3ds Max.
If you decide on one and are a student, check online because there is extreme student discounts for those programs. One website for student software is studica.com
Educational licenses just mean you can't use the software for commercial purposes (to make money) other than that, it's the full program.

I say go for what it looks like you're able to find on your own, in terms of tutorials or books you want to pick up. I've been a Max user since version 2.5, so my opinion's going to be a bit biased (go Max!). Try looking around though, see what kind of tutorials you can find just messing around on Google or YouTube (some decent video tutorials to be found on there), and see not only if you can find enough tutorials but are the tutorials USEFUL for what you want to be doing?
Be prepared for a major time investment either way...but it pays off tend fold if you ask me!

It doesn't matter. Both programs have extensive toolsets and documentation that is geared toward beginners. Once you understand how to model you will have the ability to be proficient in Autodesk, XSI, Lightwave or any other tool for that matter. User interfaces may be different, tools may have different names, but the concepts remain comparable. Try out each to see what you're comfortable with. Be prepared to do your research and devote some time (years!) before you have any great art to show.

It seems as though nearly EVERY "second dvd" of a movie that I watch, they're using Maya. If you look in the 3dWorld mag at the major feature films, most of the time they're using Maya along with proprietary software. 3ds Max tends to get used more for videogames. If you like a visual effects house, i.e. ILM, go to their website and see what type of programs are required for employment.
