Desann would win easily... hes a powerful dark jedi that can trash Luke Skywalker, literally.

Just to note, Desann is stronger than Plo Koon for sure. He can use force lightning and stuff, and he dueled Luke and nearly killed him. It was by chance Luke escaped... and Luke beat Vader and hes a mighty jedi. Desann is very good, but not supreme. Plo Koon is really cool but would loose against Desann.

I have a Star Wars Insider magazine that gives the match ups between the three arena beasts.
Acklay vs. Reek - Reek loses because it is less agile than the Acklay. The Reek battles by charging at the object and hopes it will hurt. But with a well placed shot with the claws of the Acklay and Reek is done for.
Acklay vs. Nexu - The Nexu is more agile and is able to quickly get at the underbelly of the Acklay.
Reek vs. Nexu - We already know this one because we actually saw it in the movie when Anakin killed the Nexu when he was riding the Reek
