According to TPM novelization, "The Atmosphere was filtered through Oxygen regulators, and purified by scrubbers, and water was gathered and stored in massive artificial aquifiers."

Well, many of Coruscant's architects build self-contained ecosystems into their buildings. And like T_L_R_J said, there are atmospheric dampeners in orbit that reactively remove carbon dioxide.

What I don't understand is how all these different beings breath oxygen? I mean, that Squid Head guy has tentacles coming out of his nose and you're telling me HE breaths oxygen? C'mon.

I wondered that too, but it doesn't bother me.
My Astronomy teacher would always say "There cannot be life on Mars because it doesn't have enough Oxygen in its atmosphere." and I'd be like "So what? Who says Aliens need Oxygen? That's what makes them aliens!"
So, in answer to your questions, we can't really prove who can breathe what so it doesn't matter.

Actually, there are a number of beings who don't breath oxygen and wear specialized masks and such. Like Gand (some don't breath at all, though), Kel Dor, and Skakoans.
Just look at the Jekk'Jekk'Tarr in KotOR II.

RE: coruscant
After seeing Alderaan in ROTS I wouldn't mind living there either. Either that or Iktotch.
And about the Quarrens(squid heads) they are land and sea dwellers. meaning they can breather both water and oxygen, same with Mon Calamari and Nautolan's(Kit Fisto's species). When they live on other planets, such as Coruscant these species can fit their living quarters with vents that vent a mist into their chambers so they can get moisture.
Dorins however are only able to breath the air of their homeworld and no others that why they wear masks. Same with Gand and Skakoan and a few other species.

If they can make lightsabers and hyperdrives, a little thing like oxygen technology wouldnt trouble them.....
