Man that's a tough choice. The last medley of AOTC is just beautiful with the buildup to the Imperial March, mixed in with the Republic theme then ending with Across the Stars, the search peice (Force Theme into Duel of the Fates excerpt). As good as it is though, I like more tracks from ROTS.

I was 7 in 77 so the child in me wanted to choose the music of ANH. I can't think of any other piece of music where upon hearing it you can "hear" the sound effects of a Stormtrooper's blaster and Luke's first igniting of his father's lightsaber without actually having the movie on. I think it may be a credit to the composer because in the music of Raiders of the Lost Ark I could hear within the music Indy's crack of his whip.
But, in the end, I chose what I and others believe to be the strongest and most emotional music out of all 6; ROTS. When I first saw it, the scene where Anakin is sitting alone in the Jedi Council and Padme is looking at it from afar in her apartment, the music that is used, Padmé's Ruminations, is the most eerie yet emotional I have ever heard from Williams. It echoed that these events happened in the past and is part of what shaped Anakin as he contemplates the Dark Side. Some say he turned to the Dark Side too quick after he dispatched Mace. I say his choice was already made in that Jedi Council chamber. Otherwise, why would he have gone to Palpatine's quarters? The music translates this perfectly.
Also the music when all the Jedi die. Powerfully emotional. And the then the duel between Anakin and Obi Wan. Wow. You can actually hear the betrayal and anger inside a fallen Jedi.

It'll always be A New Hope; because it was the first and was invented from nothing but a concept. The other films already had something to build off of. And while they are all generally great scores; A New Hope is special.

Revenge of the Sith, because that has a wide range of music in it. Plus, that soundtrack has the most songs out of any of the movies on my personal music list.

Right, ESB has Imperial March! Nearly forgot about that. So its Across the Stars vs Imperial March, both being extraordinary pieces of music.

Pretty tough call here, but I'd say the original Star Wars. The Empire Strikes Back right after that. In the prequels, The Phantom Menace with the great Duel of the Fates.
