There are way too many to number, as stated several times.
However, one that always gets me is when the Neimodian Ship falls out of the air on Geonosis and all the dust engulfs the fighting clones, but htey keep shooting and marching. Their laser bolts seem to dull out, but they're still the most brilliant things on the screen.

Duel of the Fates. Mainly when they are in the big open area right before Qui-Gon pimp slaps Maul. As the scene opens and the camera tilts upward w/the DOTF music and we see all 3 oponents from a distance battling was awe inspiring.

Beginning of ROTS, the space battle, especially when Anakin and Obi-Wan jump out of the starfighters and start killing the droids.
I also loved the Duel and the Yoda-Sidious duel, when they 'play ping-pong' with the Senate pods. 
Seeing Yods doing those impressive acrobatics in AOTC also made me grin.

I love the Senate blade battle, but the blade battle in the bowells of Bespin was beautiful, as well.

My 'Oh Sweet' moment was when the Jedi went to try and arrest Palpatine, I particularly loved the part where Saesee Tiin, Agen Kolar, and Kit Fisto were killed within a matter of seconds.
It was an explosive intro for Darth Sidious, and it showed what a true Sith Lord is capable of.
