That's an interesting question. I would say that they don't really believe in anything besides the Force itself. I mean, isn't that what being a Jedi is about? Trusting in the Force, listening to whatever it tells them to do? I would think so.

this is a very intriuging question!
I myself am a Christian, nad have found MANY parralels between my own religion and the Jedi, so I tend to look at the Force as God. I've read a few books as well that hint that the Force is an actaully entity- a counciousness, not just some blind energy source like electricity.
It's pointed out many times that the Jedi are tools of the Force, implying that the Force is intelligent. I think it is entirly possible that the Force did create the unerverse (in Star Wars lore)

I think Jedi is their religion. And I think one of the interesting things about the Jedi religion as its portrayed in SW is that it draws from a lot of different current and historical religions and myths. So I think it's absolutely possible for people of various faiths to see the things important to them in the Jedi faith and therefore to find religious allegories and metaphors in SW.

I mean, there are some obviously Buddhist overtones to the unification of all things and the practice of self-denial. But the Force is also described as being somewhat of an entity in the way the Jedi interact with it, and having a will, which aligns it more with an omnipotent God. Besides which, there's a fair amount of sort of Catholic Monk influence on the Jedi. But also Buddhist monk. I think this mix is intentional, and I think it's nice. As a Christian, I certainly find the religious questions and themes in SW to be one of the best things about it. I think Lucas did a good job of defining enough of the core Jedi beliefs without laying down too many specifics (although the books do moreso, I don't really read them so I'm not sure what they say). It allows for people to see themselves and wherever they are spiritually in the story of the Jedi, and ultimately identifying with characters on a deep level is a special thing.

Jedi do not believe in our definition of religion; they believe in and trust the Force, which is their path to "power" (as ong as it's not the Dark Side) and enlightenment.

Much to the disapproval of the Ewoks, the one thing that the Sith and Jedi agree on is that Threepio is not their god.
