As Alderaan was an Imperial controlled Planet, with thousands of Imperial Soldiers and Garrisons stationed there at the time. They only blew up Alderaan to punish Leia. Sorta like Vader gave her daughter a spanking. My favorite act that the Empire has done, was most likely much further back, and in the infancy of the Empire.
