Rick Springfield's cover of "Life in a Northern Town" by the Dream Academy is better than the original version, in my opinion.

on a more toungue in cheek side, William Shatner's 60s covers of Tamborine Man and Lucy in the Sky with Diamonds are brilliant, in a pee-in-your-pants kind of way.

for a more serious cover (although it's really more a remake since the original band is involved) I love Mary J Blige's cover of One by U2. The original is probably my favorite song, and I'm not really a fan of hers otherwise, but she totally pwns Bono, and Bono knows it.

"The Sound of Silence" by Simon & Garfunkle as covered by The Reverse Engineers. The band needs to find its niche, but I do like their version of the song.

"Negative Creep" by Nirvana, redone by Velvet Revolver
"Come Together" by the Beatles, redone by Zakk Wylde
and of course Nine Inch Nails' "Hurt" redone by Johnny Cash...

EDIT: oh, and "Elenor Rigby" by the Beatles redone by Godhead, and "Personal Jesus" by INXS (I think) redone by Marilyn Manson

In a college-level music class we actually listened to both the cover and the original version back to back. Most of the other people liked the original better (turned off by Janet Joplin's voice), but I loved the nice blues-rock cover.
