I'm hoping that people will come here and list all their fics in which Leia is seen doing Jedi stuff(esp Lightsaber battles)

I've got one.

Leia's trained as a Jedi in my fic, Inheritance.

 

Well, mine is still being written, but in it, Leia is a member of the New Jedi Council (for her dipolomatic skills more than her Force skills though), and will later be seen with some cool fighting stuff.

My story, NJO: The Darkness Shaped is a general NJO story following from Star by Star through to the NJO conclusion. A long read, but it has Leia as a member of the Jedi Council and also in a lightsaber duel to the death - from which, I add, she emerges victorious!

 

Half my AU, Outer Rim, has her doing Jedi stuff, and the other half has her doing Sith stuff.
