Anyone know if there's been any recording of hyperdrives being able to function without a exact starchart?

Also, any mention on sensors and their ranges?
So far in Shield of Lies, a frigate has a range of 3Light hours, and in the same book we have something that could indicate ranges of several light years, and in Vector Prime there is a telescope that can see in realspace perhaps several hundreds or thousands of lightyears.

There are many instances of people making "blind jumps" to escape danger, where people don't have time to plot a precise course and just engage the hyperdrive on whatever their current vector is. However, trying to get from place to place without a star chart or precise coordinates seems fairly difficult.

As far as ExGal's telescope on Belkadan, it would almost certainly have to be some sort of hyperspace telescope, since it saw the worldship hit Helska in more or less real time, not several years after it happened. Beats me how that would work. :)

Yes, it's actually a fairly basic/common Jedi power - the ability to plot hyperspace routes through the will of the Force. It's known as "Instinctive Astrogation." Because the Jedi plots a course with no obstructions, the hyperdrive will function without its collision-inhibitors kicking in.
