I've created a polygon using the polygonal lasso tool, but I can't fill in colors?! I mean the option "Fill" has gone grey.

Now, you're saying that you can't fill in with color. All you get is grayscale right?
Solution: Image > Mode > RGB Color. You may have opened the new image as a grayscale image. This can also be done on the color window. There's the arrow to the right, click that and hit "RGB Sliders."
If you can't fill at all, I mean that the option is not open . . . You've stumped us. If that happens you may be working on the wrong layer.

if you've used the lasso tool after using the line tool, this happens .
    go to Layer>rasterize>layer
    that should do the trick.
