Honestly, not sucking up here, but Bardan Jusik is my fav Mando. Absolutely loved Karen Traviss's books. Cal Skirata is a close 2nd. Loved the idea of a disillusioned Jedi turning to another culture. Just great storytelling. Between that series and Legacy of the Force, I was hooked on all things Mando'a.

As for your question. I gotta go with Canderous. He's just such a badass, and he's the first reason i fell in love with Mando's for something besides the cool armor.
All of his stories in KOTOR1 really do a great job of explaining the heart of Mandalore. And of course i gotta give my boy Pre honorable mention.

Bo-Katan Kryze I would have to say for the new canon. Something about her fighting to restore her people's warrior ways and honor even as a part of Death Watch, and pushing that even unto her own rebellion later in life after her sister is killed. (Whom she had taken prisoner and only helped due to Maul corrupting the Mandalorian ways). Of course becoming a reluctant leader is also a very admirable trait that I see in her when she was convinced to accept the darksaber from Sabine. Hopefully the new stuff will continue to expand upon this heroine in a good light and with plenty of charred foes at her feet.

From legends I would have to say I have always had a soft spot for someone I don't think I am supposed to. Vau. Just something about that gruff approach with a soft underbelly that always made me take a shine to him. He's not my favorite though he is close, very close. I have to admit I liked Mij Gilamar with his vengeance angle and skill with a scalpel just a little better. He was the one besides Bardan Jusik and Vau that seemed to have a good head for impromptu situations, such as slitting that artery through a gap in the armour and dumping the body in the river knowing the armor would help it sink. All to merely prevent something returning he didn't like nor felt was honorable. Of course the reference to Demagol must be mentioned, that situation helped as well.

 

Her sister would prorobly disagree that Maul was corrupting the Death Watch's ways, it was not much to corrupt after all

Also seeing that Filoni is involved with the first episode. That just makes this deal better and better. Love what he has done with the Mandos in TCW and especially Rebels. Honoring as much as he can of the Legends material but still expanding the Mandalorian mythos in the new continuity. This is...well Disney has my money for this one.
