Did anyone noticed that almost all vessels that Anakin flies in Prequel Trilogy are yellow? The Naboo fighter from TPM, speeder from AOTC, Jedi interceptor from ROTS.
Is there any symbolism in into it?

well, Numerous things have been said about the yellow colouring of Anakin's Jedi Star Fighter.

one, to respect or what ever word you want to use the Naboo crusiers he flew, and the colours of common podracers he flew,
two, to call attention to himself in battle.

    both seem possible.

Yellow often is used in conjunction with fear.

"Oh you know master, i couldn't really find a speeder that i really liked."-Anakin fron AOTC.

Maybe yellow is his favorite color.

The yellow does stand out on his podracer engines. He does fly a lot of yellow vehicles and then ends up having yellow eyes. Perhaps there's a connection? Or maybe, yellow is the closest color to sand there is and Anakin wants to remember the thrill of flying in pod-races in the sands.

Yellow symbolically represents fear, as wcleere already said. This is yet another symbolic filmmaking element that Lucas used that was almost entirely overlooked.

In that case, that's why. Anakin "Hero Without Fear" Skywalker. That name suddenly comes to mind. Perhaps that's supposed to be ironic. e is the hero without fear but his color is yellow, is denotes fear. Perhaps it means the fearless is actually fearful of many things, which is actually true. Anakin fears for Padmè, fears for Obi Wan, fears losing his family and loved ones.

Yoda does say he senses "much fear" in Anakin.

Exactly. That's the irony in Anakin's nickname. It's there for a reason. He is called "The Hero Without Fear" and yet, his choice of starship colors denotes that there is much fear in him.

I like the yellow symbolizing fear idea. It fits Anakin's character.

Something just hit me. The fighter Anakin flies after becoming Darth Vader is green, not yellow. Perhapes Anakin thinks that he is above fear at that point.

Yellow is supposedly his favorite color. I didn't realize that yellow represented fear.

When the new versions of Episodes 4-6 are released, the following changes will be made:

Darth Vader flies a yellow TIE Fighter in A New Hope.

The Super Star Destroyer and Vader's shuttle will now be yellow.

Those changes are true, but these following ones are not confirmed yet. Both Death Stars and Vader's armour will be yellow.

    ;)

Ok I'll resolve all of this, The Duce Cupe in American Graffiti was yellow, and so Lucas wanted Anakin's vehicles to be the same color, and the speader in Episode 2 had the engine open just like in the Duce Coop!

I'm pretty sure yellow symbolizes betrayal in some cultures.

Yellow is the color usually associated with cowardice. It is true, that despite all of his power, Anakin is a slayer of children and defenseless Tusken women. So he is "yellow", like many evil figures.
