Stuff like blue cheese & mustard can add some nice flavoring to a burger.

Pretty much. In most restaurants/burger joints, they have to make it as universal as possible because not everyone has the same desire for their burgers. I'm a picky eater, so when I order out I want it my way. Sure, I slap on the ketchup, but I can still taste the burger. And it still tastes pretty good...as long as the burger is made right. Some people like a crunch when they eat. So someone will make their own burger where they can get that. Hell, you put onion, lettuce and tomatoes on a burger and you get some vegetables in your meal.

 

Having lunch at Minetta Tavern tomorrow. Black Label burger here I come!
