Gruyère is reliably yummy. Good with sandwiches. Used it for mac n' cheese once with great results.
One of my Mexican-American friends in France once made enchiladas with Cantal cheese... oh.my.god.
I'm generally not a huge fan of Camembert, but one of the tastiest homemade meals I've eaten was duck with fried potatoes and Camembert melted on the grill. I took a picture:
