Yeah, I said refined starches, not all starches. I'm definitely not an expert on the paleo diet but I know a local health food restaurant sells paleo meals that have quinoa in them. And if actual cavemen filled up on it, it would be paleo, wouldn't it? I'm not really that interested in defending paleo, I just don't think the concept behind the diet deserves Even's derision.

Not that anything escapes his derision.

There's a great local pizza chain where I live. One of the newspapers here gives a round of respected awards every year. This chain has won "best pizza" 25 years in a row. They have been forever barred from the competition because as long as they're around, no other pizza will ever win. And they will be around for a very, very long time. Know what makes this pizza so good? The strong, chewy, exceptional dough. People don't talk about the cheese or sauce or other dishes (although they are also good). They rave about the famour dough. Know what makes to dough so awesome? The high amount of gluten in it - gluten's the protein that makes pizza dough textured right.
