How exactly does the economy work in Star Wars. I know all about credits and all that but why have it all electronic and with coins and stuff. Wouldn't it work with just the electronic transactions? Just been wonderin about that.

Well, 'A Guide to the Star Wars Universe' (third edition, by Bill Slavicsek) says this about the 'credit standard':
"The basic monetary unit used throughout the Empire. Based upon the Old Republic credit, it stayed in use during the time of the New Republic, though both the New Republic and the Imperial remnant produced their own currency. Most credits are stored and exchanged via computer transactions, but there is credit currency that can be carried and physically exchanged".

Think about our own currencies. Electronic transactions are recorded and can be used as evidence if for 'less than legal' purposes.
Physical exchange of hard currency is harder to trace. Also electronic exchange would be harder on a less-developed or frontier planet.

There was something about New Republic Credits being worth more in a couple of Zahn books. Something like twice the value for NR credits to Imperial ones.
There was also something about the Separatist credits being worth more and more in Republic space, but I don't know more about that.
