I here that some Jedi learn different styles of light saber training. For example I have viewed some forums stating that Mace Windu had some training from the dark side (example used from one forum: his light saber was purple. Thus blue [jedi saber] + red [dark side saber]= purple). I do not know how much of this is true. Another example was I heard from different forums that Dooku's saber attacks and defenses resembles that of "Spanish" fencing. Are there different styles of Saber training like that of different training in the martial arts? If so, what are the different types of saber training styles?

All Jedi in the Old Republic are taught Form I, style, which is the basics of lightsaber fighting (although why Jedi Master Kit Fisto specialises in a basic Form I have no idea).
In all there are 7 Forms.
Form II is Count Dooku's style, that is designed for lightsaber fighting- it is based on fencing and similar styles.
Form III is a defensive style designed to deflect blaster bolts.
Form IV is an acrobatic style much like Qui-Gon and Obi Wan in Episode 1.
Form V is pretty much what Anakin prefers- its a very powerful Form.
Form VI is the 'Diplomats Form'- its not very good, which is why so many Jedi die on the battlefield in AOTC on Geonosis.
Form VII is the style Mace Windu prefers, its experimental and unpredictable.
I think there are 'sub-styles' within these forms too.
    Hope this helps.
